  • 5 fresh Italian or plum tomatoes
  • 1/4 average red onion, sliced thin
  • 1 fresh medium-sized Cucumber
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp red wine vinegar

  1. In a bowl, mix the tomatoes, onions, and cucumber with the olive oil and red wine vinegar.
  2. Add salt and pepper to taste.
  3. Let stand for approximately 15 minutes. Toss again and serve.

Tip: You may serve this crisp salad chilled as well
